Recipe of the Day: PB Brittle
One thing that I L.O.V.E. during the holiday season is CANDY! One of my personal favorites? Peanut Brittle. But, what makes this particular recipe even better is that you can totally make it yourself at home! PS: Totally include your family, but please be careful with the little ones because this recipe calls for lots of heat in the kitchen! Inspired by abbyskitchen.co.uk!
Ingredients:
• 2 cups of sugar • 1 cup light corn syrup
• ¼ cup water • 1½ cups salted peanuts
• 4 tablespoons butter • 2 tablespoons baking soda
• 1 teaspoon vanilla • A candy thermometer
Directions:
1) Mix sugar, corn syrup, & water in a 3-quart saucepan 2) Cook over a medium heat, carefully stirring constantly until sugar is dissolved. Keep cooking & stirring until mix reaches the “soft crack stage” (285°F) 3) Next, add the salted peanuts & butter! 4) Continue cooking, continuously stirring to the “hard crack stage” (300°F), then remove the mixture from heat! 5) Quickly mix in the baking soda & vanilla. (Don’t worry, the mix will foam!) 6) Pour the contents into 2 pre-greased baking sheets & spread with a metal spatula as thin as you can! 7) When it begins to set, make sure to loosen the candy from the sheets. Flip the brittle over & pull/stretch as much as possible with two forks. 8) When totally cool, break into pieces & ENJOY!
