Recipe of the Day: Raspberry Cake Bars!

FashionPlaytes believes that it’s really important this holiday season to not only make some great food, but to be able to do it with the help of your daughter, son, niece, nephew, granddaughter, grandson… or all of them! This delicious recipe will take about 35-45 minutes & is easy enough for everyone to help! Let’s all be thankful for the Food Network for this one!

Ingredients:
- 1-2 packages (18-ounces) of refrigerated sugar cookie dough, softened
- 3/4 teaspoon lemon or almond extract
- 1/2 cup seedless raspberry jam (or any flavor you like!)
- 1/4 cup chopped pecans and/or chocolate chips
Directions:
1.) First, preheat the oven to 350 degrees F. Make sure to line an 8 x 8-in glass baking dish (use 1 package of dough) or 9 x 12-in glass (use 2 packages of dough) with enough foil so it overhangs on 2 sides.
2.) Mix the cookie dough with the extract of your choice, kneading the dough to mix. With damp fingers, press about 2/3 of the dough onto the bottom of the foil-lined baking dish.
3.) Next, carefully spread the jam evenly over the dough. Again with damp fingers, crumble the remaining 1/3 of the dough evenly over the layer of jam.
4.) Sprinkle pecans and/or chocolate chips on top & bake until browned around the edges. Check with toothpick to make sure it is cooked through to the center, 35 -45 mins.
5.) Allow to cool. Lift edges of foil to remove the bars. The bars will be soft, so be careful when cutting them into 2-inch squares or into triangular shapes.
