It’s Raspberry Picking Season!
Organic produce is all the rage these days! Nothing beats freshly picked organic vegetables or fruits especially when they are better for your family! Raspberries are currently in season, so find the nearest picking farm (search through PickYourOwn.com) & head to the raspberry patch! Be sure to pick the raspberries that are the deepest color red. These are the ripest berries & did we mention that they’re super delicious to eat!?
Check out the recipe below to make the most of your freshly picked raspberries!
Raspberry-Lemon Muffins:
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 cup half-and-half cream
- 1 cup sugar
- 1/2 cup vegetable oil
- 1/2 teaspoon salt
- 2 eggs
- 1 teaspoon lemon extract
- 1 cup fresh raspberries
- dark chocolate chunks
Directions: Mix your flour, baking powder, salt & sugar in a large bowl. In a separate bowl, mix your oil, eggs, cream & lemon extract. Next, add all of the dry ingredients until moist. The best part - add your recently-picked raspberries! Use a muffin sheet & make sure to place a greased muffin cup into each slot. Take your mix & fill each cup so it’s 2/3 full. If you’re feeling sweet, add some dark chocolate chunks to each cup! Finally, bake your muffins at 400 degrees F for 20-25 minutes or use the toothpick trick! Make sure to serve your raspberry muffins warm & share with the fam!
